Halloweenerrific’s Creepy Cupcakes

13102009700 Nowadays you can buy lots of Halloween treats and cakes in the shops. As the whole celebration has become more commercialised and popular over here, supermarkets have made more of an effort to give us more spooky snacks to choose from.
However, sometimes you can’t beat the good old home made recipes. This is definitely the case for Bride of Chuckie’s very own recipe for Creepy cupcakes. As long as you follow the instructions successfully, you’re guaranteed the fluffiest, tastiest, devilish delights known to man or goul.

Halloweenerrific’s Creepy Cupcakes

They’re tasty, easy to make and are easy to customise…

Ingredients:

  • 140g caster sugar
  • 120g plain flour
  • 1 1/2 tsp baking powder
  • 40g unsalted butter (at room temp)
  • 120ml milk
  • 1 egg
  • 1/4 tsp vanilla extract
  • and a pinch of salt
  • paper cases

Directions:

preheat your oven to 170○C (325○F) Gas mark 3

13102009693Sift the sugar, flour and baking powder into a large bowl.
Add the salt and butter and then mix with an electric whisk until the consistency is ‘sand like’ and the whole mixture is combined.

In another bowl whisk the milk, egg and vanilla extract. Slowly add this to the mixture bit by bit until everything is incorporated and you have a smooth silky cake mixture.

Place the paper cases in a 12 cake baking tray and then spoon the mixture into eash case filling it approximately 2/3rds full. Place in the oven and cook for about 15-20 mins or until a light golden colour.

For the simple spooky frosting!

Ingredients:

  • 250g icing sugar13102009697
  • 85g unsalted butter
  • 30ml milk
  • 2-3 drops of vanilla extract
  • green/organge/yellow /red food colouring

Directions:

Sift the icing sugar into a bowl. Add the butter, milk and vanilla extract and mix with a handheld electric whisk for at least 5 minutes until thoroughly combined. You will have a light and fluffy mixture.

Separate the mixture into 2 bowls (if wanting 2 different coloured cakes, or more if you should so desire!).
Add 4-5 drops of the green food dye to one and orange (or a mixture of red and yellow) to the other, adding little by little until you get desired colour.

Then just add the frosting to the cakes once cooled. You can decorate (like I have) with little Halloween decorations or draw some on with fun icing pens!
